Escobar likes to add plenty of nutritious spinach to her smoothies. "Eating spinach is beneficial for maintaining healthy skin, hair and strong bones, as well as helping with digestion, lowering the risk for heart disease and improving blood glucose control in diabetics," says registered dietitian Megan Ware.
Escobar loves stair climbing for strong, toned legs and glutes. "You're able to work through a [large] range of motion at the hip and knee which can benefit your butt muscles, as well as the quadriceps, and hamstrings," says Heather Milton, CSCS, an exercise physiologist at NYU Langone's Sports Performance Center.
Escobar loves using weights to support her health and fitness. "To me, resistance training is the most important form of training for overall health and wellness," says Brad Schoenfeld, an assistant professor of exercise science at New York City's Lehman College. "[Maintaining strength later in life] seems to be one of the best predictors of survival," says Mark Peterson, assistant professor of physical medicine at the University of Michigan. "When we add strength…almost every health outcome improves. It used to be we thought of strength training as something for athletes, but now we recognize it as a seminal part of general health and well-being at all ages."
Escobar enjoys delicious avocado, even using it to make bread. "Avocados are an excellent source of monounsaturated fat and vitamin E, and are a good source of folate," says registered nutritionist Jo Lewin. "They also supply more soluble fiber than other fruit and contain a number of useful minerals including iron, copper and potassium."
Escobar loves a plate of fresh, seasonal fruit for breakfast—especially bananas, melon, and watermelon. "Bananas are loaded with valuable micronutrients, especially potassium, which is one of the most important electrolytes in the body," Lewin says. "Potassium helps to regulate heart function as well as fluid balance which is a key factor in managing blood pressure. The effectiveness of potassium-rich foods such as bananas, in lowering blood pressure and protecting against heart disease and strokes is well accepted and bolstered by considerable scientific evidence."
